Smoked rum is as good an excuse as any...
I've been toying with the idea of replacing the BBQ on "So It Goes" with a grill/smoker... Having a smoker onboard would be very handy in dealing with a big mahi mahi or tuna and be more adaptable to being the go-to oven for making bread and suchlike.
The problem is that no one seems to make a boat friendly sized smoker (though this one looks promising) and, to be truthful, I am up to my ears in projects so adding building a propane-fueled smoker from scratch is just more than the system can handle.
Or so I thought, till I read this today over at Serious Eats...
Two words...

A great BBQ fix...
One of the most difficult parts of cooking on a cruising boat is that so called "marine" stoves and grills are, at best, pretty awful (I won't go into the part about them being way too expensive).
Right now we have an OK grill/BBQ. It gets hot enough to cook stuff but not quite as hot as I'd like and it really does not throttle down to where I'd like it to either. That said, it is OK considering every other propane BBQ we have had has been lots worse.
I have been considering swapping out the anemic burner for some time but it is nice to see that others with the same problem have already sorted out the problem and come up with a workable and affordable solution...

I need this book!
I don't often get the urge to go out and buy cookbooks but I have been hearing so much good stuff about "The Tex-Mex Grill" that I don't just have the urge... I need to get it!
I've been a follower of Robb Walsh for some time and he brings so much more than just recipes to the party, a thing a lot of cook book authors should seriously consider as a little history and heart really makes it all come alive.
More soon come after I get my copy...

More chicken... PIZZA!
I was just working though this weeks coming menu on "So It Goes" and the word pizza just kind of resonated...
Baker's Banter had a recent post on a Thai fusion pizza that is just the sort of thing to use up those chicken leftovers... Spicy!
I'm still working out the best way to bake on our BBQ and it is an ongoing project but the big advantage is that it does not heat up the interior of the boat...

Chicken on the grill...
Down here in the Caribbean chicken, is more often than not, what's for dinner! Being that it is, one tends to appreciate and keep a wary eye out for good chicken recipes for the grill...

Hurricane comfort food...
Since we have Hurricane Bill in the neighborhood, today's menu is all about comfort food with a capital "C"!
Offhand, I can't think of much more comforting than BBQ ribs, corn and baked potatoes, add some beer to the ingredient list and we are getting somewhere...
Luckily Accidental Hedonist has a great recipe for Slow cooked brown ale ribs which I find done in a pressure cooker makes for a great ersatz BBQ (like I'm going to be hanging out on the deck grilling with a Class four Hurricane out and about). I think we need more beer...

Perfect cockpit munchie...
Food to go along with cockpit entertaining is something of an art form and I am always on the lookout stuff exactly like this...
Caponata with bread grilled on the BBQ is perfect for solving the problems of the world while relaxing in the cockpit and watching the sun go down!
For the recipe check out Bakers Banter which is just an amazing resource...
